The Ball is Rolling

To get the ball rolling I've been doing a lot of recipe testing. Too much, really.
I'm so sick of waffles that I don't even know what tastes good anymore. Well, I'm very close. I've got the sweetness figured out and the yeast ratio seems to be good, but the texture was off.
All AP flour was too crumbly; all bread flour, too heavy.
Back to the kitchen to figure out the perfect blend.
Gluten, you are a cruel mistress.
